Lemon Glazed Cake

A fresh tea-time cake with lemon cake mix and a two-ingredient glaze.

Method

  1. Preheat the oven to 170 °C and grease and flour a loaf tin.
  2. Beat the cake mix with eggs, milk and oil according to the pack.
  3. Pour the batter into the tin and bake for about 35–40 minutes, until a skewer comes out clean.
  4. Mix the icing sugar and lemon juice into a runny glaze.
  5. Once the cake has cooled slightly, drizzle with the glaze and finish with lemon zest.
